Honey Roasted Sweet Potatoes

These are so good! It's hard to find a sweet potato recipe that doesn't include tons of sugar and butter as its main ingredients. These are on the healthier end but still deliver an amazingly sweet taste. And the delicious smell of warm cinnamon in your kitchen as these roast in the oven are reason alone to make these.

{Makes 6 servings.  Serving size 3/4 cup. 95.5 calories per serving}

Ingredients:
2 pounds red skinned sweet potatoes
2 TBS olive oil
2 TBS honey
1 TSP fresh lemon juice
1 TSP salt
1 TSP cinnamon

Directions:
Preheat oven to 350 degrees.
Peal and cut the sweet potatoes into 1 inch pieces. Place in a 9x13 baking dish.
In a bowl whisk together honey, olive oil, and lemon juice.
Pour mixture over potatoes and toss to coat.
Sprinkle with the salt and cinnamon and stir together.
Bake, stirring occasionally until potatoes are tender (about 1 hour).
