November {Week 3}

monday:: homemade tomato basil soup & grilled cheese.

October {Week 3}

Monday ~ crockpot turkey chili.

Tuesday ~ grilled cheese sandwiches & tomato soup.

Wednesday ~ whole wheat banana pancakes with berry sauce.

Thursday ~ meatloaf & baked sweet potatoes.

Friday ~ tacos.

Saturday ~ cougar game! dinner in seattle.

Sunday ~ louies bday dinner {lasagana}

Baked Sour Cream Chicken

I made this baked chicken for dinner tonight and it was loved by everyone.
 For the boys, I cut their chicken into bite size pieces and served with ketchup for them to dip in.
 The cornflake crust made it a similar texture to chicken nuggets and they loved it.
 It's a fun meal to make with kids because you can put the cornflakes in a plastic bag and let them crush it up for you.
 Perfect job for boys.
 This recipe is a keeper.

Ingredients:

  • 4 boneless skinless chicken breasts
  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 1 tablespoon mrs. dash seasoning
  • 1/4 cup butter melted 
  • 2-3 cups crushed cornflakes
Directions:

  • preheat oven to 350.
  • mix sour cream, mayo, and seasoning together. coat chicken in the mixture. dip chicken in the crushed cornflakes. placed in a lightly greased pan and drizzle with butter. Cook until chicken is cooked through, about 45 minutes.

September {Week 4}

Thursday~ Taco Salads with Crispy Baked Taco Bowls.

Friday~ Pita Wraps.

Saturday~ Dinner Out (Beckys Bday)

Sunday~ Black Bean Tacos and Rice.

Baked Pasta Shells & Cheese

Here's a super easy comfort meal that I make for the boys when I want minimal effort on my part. I use Ramekins because you can vary the contents to meet individual tastes, it's easier to portion size for kids, and the presentation is pretty :)

You can experiment with any type of pasta, sauce, and cheeses
or add chicken and peas to make it more of a meal.

{ Baked Pasta Shells & Cheese }
Spray Ramekins with Pam and place on a baking sheet
Bake pasta and divide into Ramekins
Add pasta sauce (if using)
Cover with cheese of your choosing 
Pop it in the oven at 350 for 10 minutes or until cheese is melted.

My boys favorite is tube pasta mixed with a smidge of butter and topped with mozzarella cheese. Simple comfort food.
